Gail's Cake Pantry are a wedding cake specialist based in Erwood, on the banks of the river wye close to Brecon Beacons and the market town of Hay on wye, Powys/Herefordshire border.
The artist behind these sugary masterpieces is Gail Jackson she grew up surrounded by family members who were all involved in the baking industry. This inspired her to specialise in creating mouth-watering traditional and novelty cakes for weddings and other special occasions. She uses the finest local ingredients and designs each cake to reflect the personalities of her clients.
Services Offered
Every cake designed by Gail is custom made with you in mind. She will draw from your inspirations, personality, and wedding themes to craft your bespoke cake. Your choice of delicate handmade sugar flowers, dried or fresh flowers can be used in the creation of your personalised cake. Each cake is handmade to order with large menu of delicious cake flavours, ensuring that your wedding cake is everything you ever imagined.
We also offer wedding favours, traditional welsh cakes, shortbread & cookies to compliment your cake.

Great design, great cake, great service
From the outset Gail was BRILLIANT. I really wasn't sure what I wanted but she took the theme and styling of our wedding and came up with lots of ideas. Every option was so tasty it was hard to choose. I had left everything to the last minute but she was super calm and so supportive. We were so pleased with the design, the taste was amazing (we saved the top tier for us!), so many commented on how delicious it was. thanks you SO much Gail!

The Perfect Cake For a Couple of Bookworms
We got married just outside Hay-on-Wye in 2022 (second hand book capital of the world) and wanted a cake that reflected our shared love of books. Gail created something truly unique and beautiful for us, we were literally blown away. Without doubt the best cake I've ever tasted and it was a massive hit with all of our guests too! the sponge was as light as a feather and the jam was simply delicious. Not only that, we got to keep the top books as they were essentially a 'topper' but you'd never have known. Thank you so much Gail, it was better than perfect! I would highly recommend Gail

Beyond Amazing
Gail created the most stunning cake we have ever seen. The brief we gave was Warhammer meets Art Deco and we were blown away. The attention to detail in every stone and pillar of a futuristic sc-fi battle scene, whilst maintaining the delicate details of the 1920's aspects was breath-taking. It was truly a work of art, almost too beautiful to cut into. The design was elegant and imaginative, perfectly capturing the occasion. You could tell Gail and team poured their heart into making it, and we are so grateful for their incredible creativity and passion. It was a masterpiece from start to finish. And to top it all it tasted amazing, would definitely the coffee cake!!

Gorgeous Cake That Tasted As Good As It Looked
After having spoke to 3 other wedding cake makers and tried (a lot) of cake samples at a wedding fair in Builth Wells, Gail's cakes were hands down the tastiest we had. We also had a very rustic/boho style wedding in mind and looked and looked for someone who really specialised in naked cake styles, which is where Gail really stood out from the others!
Suffice to say we went for a naked cake, decorated with fruit and flowers and it really was stunning! I can hand on heart say that it's the best cake I have ever eaten and I had so many guests come up to me in the evening asking who had made our cake because it was so delicious!
Not only this, Gail was super professional and really helpful from the time we enquired to the day of our wedding. She delivered it to our venue in a timely manner and sorted all of the decorating for us, saving us any additional stress on the day.
I would recommend Gail to anyone looking for a cake for any occasion, but especially a wedding! Thank you so much!

Exceptional in every way
Gail is a true master of her craft. From start to finish she was efficient, professional and responsive, clearly listening to our brief and requirements and tailoring her work to meet them intuitively and easily.
She gave us sound advice on numbers and dimensions, displayed the cakes beautifully and everything was so thought through.
Every flavour was perfectly balanced and you can see how gorgeously decorated everything was.
Even the gluten free options were delicious - you could not tell the difference!
We absolutely cannot rate her enough. We are so glad we found her. Thank you for creating such amazing treats. There was nothing left!

Gorgeous cake
Gail was so friendly and helpful from the moment we got in touch with her. Listening to what we wanted and offering advice when we asked for it, she was always so helpful. Our cake looks exactly as I pictured it, and tasted so delicious that many of our guests said it was the best Victoria sponge cake they'd ever had. Would 100% recommend Gail if you are looking for a wedding cake.

We loved our cake
We chose a to tier cake, with a different flavour per tier. Lime and coconut for one and raspberry and white chocolate for the other. We asked for a semi naked cake, decorated in colours to match our wedding - gold, green and white. This is what Gail provided. We paid for delivery to our venue, Craig Y Nos Castle, where Gail worked with the wedding team to get it all ready for our photographs. The cake was cut and served as part of our evening buffet - loads of people commented how lovely it was. Overall very happy with the quality of the finished product.

Beautiful Wedding Cake
Our naked wedding cake was exactly as we asked it was stunning but it tasted even better than it looked! Would 💯 recommend Gail's Pantry for weddings birthdays anniversaries... any excuse quite frankly to have a cake from Gail haha!

Delicious and beautiful cake!
Gail made us the most delicious red velvet cake for our wedding day! It looked beautiful- it was 3 tiers and had a semi-naked finish. Gail arranged flowers from our florist and we rented a log stand from her, and the finished result was perfect!
Gail was very friendly, helpful and professional throughout our planning process. We are very grateful to her for helping to make our dream wedding cake!

Delicious!

The best supplier that we hired
Gail's bakery absolutely smashed it out of the park with our wedding cake. We had lime and coconut and lime and poppy seed for our two tiers and all of our guests and me and my partner absolutely loved it!! Only thing we were sad about was when it finished.
The planning process was also fantastic, with being able to do cake tasting while not in Wales (we were able to get the mini taster slices posted to us) and having great communication with Gail. Also very good value for money compared to a lot of other cake places! Gail also came in early before the wedding to help decorate the cake with our own flowers and did so in such a fantastic way. Would definitely recommend.
